  • 1 pound Chicken Breast Cooked and shredded.
  • 2 cups Fresh Spinach Washed and stems removed.
  • 8 ounces Cheese (Mozzarella and Cheddar) Grated for easier melting.
  • 4 slices Bread Thick slices of sourdough or whole wheat.
  • 2 tablespoons Unsalted Butter For spreading on the bread.
  • 1 clove Garlic Minced.
  • to taste Salt and Pepper For seasoning.

Instructions

  • Season the chicken breast with salt, pepper, and spices. Cook in a skillet over medium heat for 6-7 minutes on each side until cooked through.
  • Remove the chicken from the skillet and let it rest. In the same skillet, heat a small amount of olive oil or butter.
  • Sauté the minced garlic for 30 seconds, then add the spinach and cook until wilted (2-3 minutes). Combine with shredded chicken in a bowl.
  • Assemble the sandwich with two slices of bread, adding the chicken and spinach mixture, followed by grated cheese, and top with another slice of bread.
  • Spread butter on the outside of the sandwich and grill in the skillet for 3-4 minutes on each side until golden brown.
  • Remove from skillet, let cool for a minute, then slice in half and serve warm.

Notes

For variations, consider adding sun-dried tomatoes, different cheeses, or avocado slices. Serve with tomato soup or a side salad.
