Filling Ingredients

  • 16 ounces Cream Cheese Softened to room temperature.
  • 1 cup Sour Cream Adds tangy flavor and smooth texture.
  • 0.33 cups Lime Juice Freshly squeezed for best flavor.
  • 1 unit Lime Zest From one lime to enhance flavor.
  • 21 ounces Cherry Pie Filling For topping the cheesecake.
  • 1 cup Whipped Cream For serving as a garnish.

Instructions

  • In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture resembles wet sand.
  • Press the crumb mixture into the bottom of a 9-inch springform pan and set aside.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add sour cream, lime juice, and lime zest to the cream cheese. Beat until well combined and smooth.
  • Gradually add granulated sugar, continuing to beat until fully incorporated.
  • Pour the filling over the prepared crust and smooth the top.
  • Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Remove from the springform pan and top with cherry pie filling.
  • Serve with whipped cream on top and enjoy!
