Blue Cheese
Crumble for mixing.

Instructions
Preheat your oven to 400°F (200°C).
Wash the russet potatoes thoroughly and pat them dry.
Poke holes in each potato with a fork and bake directly on the oven rack for 45-60 minutes until fork-tender.
Allow the potatoes to cool for about 10 minutes.
In a mixing bowl, combine blue cheese, butter, sour cream, garlic, chives, salt, and pepper.
Slice each potato in half lengthwise and scoop out the flesh, mixing it into the cheese mixture.
Fill each potato skin with the blue cheese mixture and sprinkle extra blue cheese on top.
Return the potatoes to the oven and bake for an additional 15-20 minutes until golden brown.
Let cool for a few minutes, garnish with chives, and serve warm.
