Ingredients

Potatoes

  • 4 medium Russet Potatoes Approximately 6-8 ounces each.

Filling

  • 1 cup Blue Cheese Crumble for mixing.
  • 4 tablespoons Unsalted Butter Softened.
  • 1/2 cup Sour Cream
  • 2 cloves Garlic Minced.
  • 1/4 cup Chives Finely chopped.

Seasoning

  • to taste Salt
  • to taste Pepper

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash the russet potatoes thoroughly and pat them dry.
  • Poke holes in each potato with a fork and bake directly on the oven rack for 45-60 minutes until fork-tender.
  • Allow the potatoes to cool for about 10 minutes.
  • In a mixing bowl, combine blue cheese, butter, sour cream, garlic, chives, salt, and pepper.
  • Slice each potato in half lengthwise and scoop out the flesh, mixing it into the cheese mixture.
  • Fill each potato skin with the blue cheese mixture and sprinkle extra blue cheese on top.
  • Return the potatoes to the oven and bake for an additional 15-20 minutes until golden brown.
  • Let cool for a few minutes, garnish with chives, and serve warm.

Notes

For variations, consider adding roasted garlic, spinach, or different cheeses.
