Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly under cold water.
  • Cut the potatoes into evenly sized cubes, approximately 1-inch pieces.
  • In a large mixing bowl, combine the potato cubes with olive oil. Toss to coat evenly.
  • Add parmesan cheese, garlic powder, salt, and black pepper to the bowl. Mix well.
  • Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
  • Bake the potatoes for 25-30 minutes, stirring halfway through.
  • While the potatoes are roasting, prepare the tomato sauce in a saucepan.
  • Sauté the chopped onion in olive oil until translucent.
  • Add crushed tomatoes and simmer for about 10 minutes.
  • Add Italian seasoning and adjust seasoning with salt and pepper.
  • Remove sauce from heat and stir in fresh basil if desired.
  • Serve the crispy parmesan potatoes on a platter, drizzling the tomato sauce over the top.
  • Garnish with more fresh basil if desired and enjoy immediately.
