Instructions
Peel the onions, cut off the ends, and slice them into thick rings, approximately 1/4 to 1/2 inch wide. Separate the rings and set aside.
In a mixing bowl, whisk together the flour, baking powder, garlic powder, onion powder, paprika, salt, and pepper.
In another bowl, combine the buttermilk and egg, whisking until smooth.
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Avoid over-mixing.
Heat the oil in a deep skillet over medium-high heat. Test the oil by dropping a small amount of batter; it should sizzle.
Dip each onion ring into the batter, allowing excess to drip off before placing it in the hot oil.
Fry the onion rings in batches for 2-4 minutes until golden brown and crispy, turning occasionally.
Remove the onion rings with a slotted spoon and place them on paper towels to drain excess oil.
Repeat with remaining onion rings, adjusting heat as necessary.
Serve hot with your favorite dipping sauces.
