Crispy Homemade Herby Falafel

Ingredients

  • 1 cup Dried Chickpeas Soaked overnight in water.
  • 1 cup Fresh Parsley Finely chopped.
  • 1/2 cup Fresh Cilantro Finely chopped.
  • 4 cloves Garlic Minced.
  • 1 small Onion Finely chopped.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black Pepper Freshly ground.
  • 1 teaspoon Baking Powder
  • 2-3 tablespoons Flour All-purpose flour.
  • Enough for frying Vegetable Oil Choose a high smoke point oil.

Instructions

  • 1. Rinse the dried chickpeas under cold water and soak them in a large bowl covered with water overnight.
  • 2. Drain and rinse the soaked chickpeas, then pat them dry with a towel.
  • 3. In a food processor, combine the chickpeas, parsley, cilantro, garlic, and onion. Pulse until coarsely ground.
  • 4. Add cumin, coriander, salt, black pepper, and baking powder. Pulse until well combined.
  • 5. Transfer to a bowl and mix in flour until slightly sticky but manageable.
  • 6. Cover and refrigerate the mixture for at least 30 minutes.
  • 7. Heat vegetable oil in a deep frying pan over medium heat to 350°F (175°C).
  • 8. Form the mixture into small balls or patties and carefully drop them into the hot oil.
  • 9. Fry for about 3-4 minutes per side until golden brown and crispy.
  • 10. Remove from oil and drain on paper towels. Serve warm.

Notes

For variations, consider adding spices or different herbs, or serve with tahini sauce.
