Crispy Homemade Herby Falafel

Soaked overnight in water.

Choose a high smoke point oil.
Instructions
1. Rinse the dried chickpeas under cold water and soak them in a large bowl covered with water overnight.
2. Drain and rinse the soaked chickpeas, then pat them dry with a towel.
3. In a food processor, combine the chickpeas, parsley, cilantro, garlic, and onion. Pulse until coarsely ground.
4. Add cumin, coriander, salt, black pepper, and baking powder. Pulse until well combined.
5. Transfer to a bowl and mix in flour until slightly sticky but manageable.
6. Cover and refrigerate the mixture for at least 30 minutes.
7. Heat vegetable oil in a deep frying pan over medium heat to 350°F (175°C).
8. Form the mixture into small balls or patties and carefully drop them into the hot oil.
9. Fry for about 3-4 minutes per side until golden brown and crispy.
10. Remove from oil and drain on paper towels. Serve warm.
Notes
For variations, consider adding spices or different herbs, or serve with tahini sauce.
