  • 2 cups Vegetable oil For frying.
  • 1 cup Dipping sauce Yogurt-based or garlic aioli.

Instructions

  • Rinse the zucchinis under cold water and pat them dry with a clean kitchen towel.
  • Slice the zucchini into ΒΌ-inch thick rounds and place them on paper towels to absorb moisture.
  • In a shallow bowl, combine the flour, salt, pepper, and garlic powder.
  • In another bowl, beat the eggs until well combined.
  • Place the breadcrumbs in a separate shallow dish.
  • Coat each zucchini slice in flour, then dip in eggs, and finally coat with breadcrumbs.
  • Heat the vegetable oil in a skillet over medium-high heat.
  • Fry the zucchini slices in batches for 2-3 minutes on each side until golden brown.
  • Transfer the fried zucchini to a plate lined with paper towels to absorb excess oil.
  • Season with extra salt if desired and serve with the dipping sauce.

Notes

For a healthier option, consider baking the zucchini instead of frying.
