Instructions
Rinse the zucchinis under cold water and pat them dry with a clean kitchen towel.
Slice the zucchini into ΒΌ-inch thick rounds and place them on paper towels to absorb moisture.
In a shallow bowl, combine the flour, salt, pepper, and garlic powder.
In another bowl, beat the eggs until well combined.
Place the breadcrumbs in a separate shallow dish.
Coat each zucchini slice in flour, then dip in eggs, and finally coat with breadcrumbs.
Heat the vegetable oil in a skillet over medium-high heat.
Fry the zucchini slices in batches for 2-3 minutes on each side until golden brown.
Transfer the fried zucchini to a plate lined with paper towels to absorb excess oil.
Season with extra salt if desired and serve with the dipping sauce.
