  • 4 pieces Boneless, skinless chicken breasts Each weighing approximately 6 ounces, pounded to an even thickness.
  • 1 cup Breadcrumbs Plain or seasoned for coating.
  • 1 cup Shredded cheese Mozzarella or cheddar for cheesy goodness.
  • 2 large Eggs Beaten, used as a binding agent.
  • 1/2 cup All-purpose flour For dredging the chicken.

  • 1/4 cup Vegetable oil or olive oil For frying.

Instructions

  • Begin by preparing the chicken. Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin. Season both sides of the chicken breasts generously with salt and pepper.
  • Set up your breading station. In one shallow dish, place the all-purpose flour. In a second dish, beat the eggs until well combined. In a third dish, pour the breadcrumbs.
  • Dredge each chicken breast in the flour, making sure to coat it evenly on both sides. Shake off any excess flour.
  • Dip the floured chicken into the beaten eggs, ensuring it is fully coated. Allow any excess egg to drip off.
  • Press the chicken breasts into the breadcrumbs, ensuring that they are well-coated on both sides.
  • Heat the vegetable oil in a large skillet over medium heat. Carefully place the breaded chicken into the hot oil, ensuring not to overcrowd the pan.
  • Cook the chicken for about 4-5 minutes on each side or until they are golden brown and cooked through. The internal temperature should reach 165°F (75°C).
  • Transfer the schnitzels to a paper towel-lined plate to drain any excess oil.
  • While the schnitzels are still hot, sprinkle the shredded cheese generously over the top. You can pop the schnitzels back into the skillet for a minute or two to melt the cheese further.
  • Garnish with freshly chopped parsley if desired and serve immediately.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. To reheat, place the schnitzels in a hot skillet for a few minutes to restore their crispiness.
