Preheat your oven to 400°F (200°C).
Prepare the pumpkin by cutting it into chunks, roasting until tender, and blending until smooth.
Cook the pasta in salted boiling water until al dente, then drain and set aside.
In a saucepan, melt the butter and whisk in the flour to create a roux.
Gradually add the milk, stirring until the mixture thickens and simmers.
Add the pumpkin puree and cheese, stirring until melted and smooth.
Season with salt, pepper, and nutmeg, then combine with the pasta.
Transfer to a greased baking dish, top with breadcrumbs if using, and bake at 350°F (175°C) for 20-25 minutes.
