Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare the pumpkin by cutting it into chunks, roasting until tender, and blending until smooth.
  • Cook the pasta in salted boiling water until al dente, then drain and set aside.
  • In a saucepan, melt the butter and whisk in the flour to create a roux.
  • Gradually add the milk, stirring until the mixture thickens and simmers.
  • Add the pumpkin puree and cheese, stirring until melted and smooth.
  • Season with salt, pepper, and nutmeg, then combine with the pasta.
  • Transfer to a greased baking dish, top with breadcrumbs if using, and bake at 350°F (175°C) for 20-25 minutes.
  • Let cool slightly before serving warm.
