Instructions
Prepare the cauliflower by removing leaves and stem, cutting into florets, and rinsing under cold water.
Bring a large pot of salted water to a boil and add the cauliflower florets. Cook for 10-12 minutes until fork-tender.
While the cauliflower cooks, melt butter in a skillet over medium heat and sauté minced garlic for 1-2 minutes until fragrant.
Drain the cooked cauliflower and let it sit in a colander to release excess moisture.
Transfer the drained cauliflower to a mixing bowl or food processor. Add sautéed garlic and melted butter, heavy cream, salt, and pepper.
Blend or mash the mixture until smooth, adjusting seasoning as necessary.
Transfer to a serving bowl and garnish with chopped chives or parsley. Serve hot.
