Instructions
Prepare your workspace and gather all ingredients. Ensure cream cheese is softened.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Gradually add powdered sugar, starting with 2 cups, mixing on low speed until incorporated.
Add mint extract, starting with 1 tsp, and mix well. Adjust to taste.
If desired, add food coloring and fold into the mixture until evenly colored.
Dust hands with powdered sugar and roll small portions of the mixture into balls.
Place rolled mints on a parchment-lined baking sheet, spaced apart.
Optionally, roll mints in granulated sugar for added sweetness and texture.
Refrigerate the baking sheet for at least 30 minutes until mints are firm.
