  • 1 pound Brussels Sprouts Trimmed and halved.
  • 12 ounces Pasta Fettuccine or linguine works best.
  • 1 cup Heavy Cream Adds richness and creaminess.
  • 3-4 cloves Garlic Minced.

  • 2 tablespoons Olive Oil For roasting the Brussels sprouts.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and trim the Brussels sprouts, then slice them in half.
  • In a large mixing bowl, combine Brussels sprouts with olive oil, salt, and pepper. Toss until coated.
  • Spread Brussels sprouts on a baking sheet and roast for 20-25 minutes until golden brown.
  • While roasting, bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water before draining.
  • In a large skillet, heat olive oil and sauté minced garlic for 1-2 minutes until fragrant.
  • Pour in heavy cream and stir continuously until warmed.
  • Add grated Parmesan cheese to the cream and stir until melted.
  • Add roasted Brussels sprouts to the creamy sauce and mix well.
  • Toss the drained pasta with the sauce and Brussels sprouts until well combined.
  • Cook for an additional minute, then taste and adjust seasoning if necessary.
  • Serve immediately, garnished with extra Parmesan cheese and a drizzle of olive oil.

Notes

For added protein, consider incorporating grilled chicken or sautéed shrimp. You can also experiment with different greens or cheeses.
