Ingredients

Pasta

  • 400 grams Pasta of choice (penne or fusilli) Cooked al dente

Feta Cheese

  • 200 grams Block feta cheese Baked until golden and creamy

Cherry Tomatoes

  • 300 grams Fresh cherry tomatoes Halved

Olive Oil

  • 3 tablespoons Extra virgin olive oil For drizzling

Garlic

  • 4 cloves Minced garlic For flavor

Fresh Basil

  • 1 handful Fresh basil leaves Chopped

Salt and Pepper

  • Salt To taste
  • Black pepper To taste

Red Pepper Flakes

  • 1 pinch Red pepper flakes Optional, for heat

Instructions

  • Preheat your oven to 200°C (400°F).
  • Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  • In a large oven-safe baking dish, place the block of feta cheese in the center and surround it with the halved cherry tomatoes.
  • Drizzle the olive oil over the feta and tomatoes, ensuring everything is well coated.
  • Add the minced garlic evenly over the feta and tomatoes.
  • Season generously with salt and pepper, and sprinkle red pepper flakes if desired.
  • Bake for about 25-30 minutes until the feta is melted and golden, and the tomatoes are soft.
  • Chop the fresh basil leaves and set aside.
  • Once baked, remove the dish from the oven and mash the feta and tomatoes together to create a creamy sauce. Add reserved pasta water if needed.
  • Fold the cooked pasta into the creamy mixture, ensuring every piece is coated.
  • Finish with chopped fresh basil and serve immediately.
