Instructions

  • 1. Cook the whole wheat noodles according to the package instructions in a large pot of salted boiling water until al dente, about 8-10 minutes.
  • 2. In a medium bowl, combine tahini, lemon juice, minced garlic, and olive oil. Whisk until smooth and creamy, adding warm water if needed.
  • 3. Drain the noodles and rinse under cold water to stop the cooking process.
  • 4. In a large mixing bowl, combine the drained noodles, fresh spinach, and basil leaves. Toss gently to combine.
  • 5. Pour the tahini sauce over the noodle mixture and toss until evenly coated. Adjust seasoning with salt and pepper.
  • 6. Serve immediately or refrigerate for later. Garnish with extra basil or a drizzle of olive oil if desired.
