Instructions
Begin by preparing your ingredients. Shell the fresh peas if using whole ones, measuring out about 2 cups. If you’re using frozen peas, measure out the same amount and set them aside.
Bring a large pot of salted water to a boil. Once boiling, add 12 ounces of your chosen pasta. Cook it according to package instructions until it reaches al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.
While the pasta cooks, heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add 2-3 cloves of minced garlic and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.
Once the garlic is fragrant, add the fresh or frozen peas to the skillet. Stir to combine and cook for about 3-4 minutes until the peas are tender and vibrant in color.
Pour in 1 cup of vegetable broth and bring the mixture to a gentle simmer. Allow it to cook for about 5 minutes.
Using an immersion blender, carefully blend the pea and broth mixture until it becomes smooth and creamy.
Add the juice of one lemon and stir well to incorporate. Season the sauce with salt and pepper to taste.
Once the pasta is cooked, reserve about 1 cup of the pasta cooking water, then drain the pasta. Add the drained pasta to the skillet with the creamy pea sauce. Toss gently to coat the pasta evenly.
If the sauce is too thick, add a little reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
Finally, if desired, stir in ¼ cup of freshly grated Parmesan cheese, allowing it to melt into the sauce.
Serve the Creamy Fresh Pea Pasta immediately, garnished with extra Parmesan and a sprinkle of black pepper if desired.
Notes
Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water or broth to loosen the sauce if necessary.
