Instructions

  • Begin by preparing your ingredients. Shell the fresh peas if using whole ones, measuring out about 2 cups. If you’re using frozen peas, measure out the same amount and set them aside.
  • Bring a large pot of salted water to a boil. Once boiling, add 12 ounces of your chosen pasta. Cook it according to package instructions until it reaches al dente, usually around 8-10 minutes. Stir occasionally to prevent sticking.
  • While the pasta cooks, heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add 2-3 cloves of minced garlic and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.
  • Once the garlic is fragrant, add the fresh or frozen peas to the skillet. Stir to combine and cook for about 3-4 minutes until the peas are tender and vibrant in color.
  • Pour in 1 cup of vegetable broth and bring the mixture to a gentle simmer. Allow it to cook for about 5 minutes.
  • Using an immersion blender, carefully blend the pea and broth mixture until it becomes smooth and creamy.
  • Add the juice of one lemon and stir well to incorporate. Season the sauce with salt and pepper to taste.
  • Once the pasta is cooked, reserve about 1 cup of the pasta cooking water, then drain the pasta. Add the drained pasta to the skillet with the creamy pea sauce. Toss gently to coat the pasta evenly.
  • If the sauce is too thick, add a little reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
  • Finally, if desired, stir in ¼ cup of freshly grated Parmesan cheese, allowing it to melt into the sauce.
  • Serve the Creamy Fresh Pea Pasta immediately, garnished with extra Parmesan and a sprinkle of black pepper if desired.

Notes

Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water or broth to loosen the sauce if necessary.
