Instructions
Peel and cut the potatoes into equal-sized chunks.
Place the chopped potatoes in a large pot, cover with cold water, and add a pinch of salt.
Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until tender.
In a skillet, melt 2 tablespoons of butter and sauté the cabbage or kale for 5-7 minutes. Add green onions in the last minute.
Drain the potatoes and return them to the pot. Let them sit for a minute.
Add the remaining butter and mash the potatoes until smooth.
Gradually mix in the milk until desired creaminess is achieved.
Fold in the sautéed greens and season with salt and pepper.
Serve hot, optionally adding a pat of butter on top.
