  • 2 pounds Starchy Potatoes (Russets or Yukon Golds) Provides a creamy base.
  • 4 tablespoons Unsalted Butter Enriches the dish with flavor.
  • 1 cup Whole Milk Achieves desired creamy consistency.
  • 1 cup Chopped Green Onions Adds fresh and mild onion flavor.
  • 2 cups Finely Chopped Cabbage or Kale Adds nutritional value and crunch.
  • 1 teaspoon Salt Enhances flavors.
  • 1/2 teaspoon Black Pepper Adjust to taste.

Instructions

  • Peel and cut the potatoes into equal-sized chunks.
  • Place the chopped potatoes in a large pot, cover with cold water, and add a pinch of salt.
  • Bring to a boil, then reduce to a simmer and cook for 15-20 minutes until tender.
  • In a skillet, melt 2 tablespoons of butter and sauté the cabbage or kale for 5-7 minutes. Add green onions in the last minute.
  • Drain the potatoes and return them to the pot. Let them sit for a minute.
  • Add the remaining butter and mash the potatoes until smooth.
  • Gradually mix in the milk until desired creaminess is achieved.
  • Fold in the sautéed greens and season with salt and pepper.
  • Serve hot, optionally adding a pat of butter on top.

For variations, consider adding cheese, garlic, or different greens.
