  • 300 grams Pasta Penne or fusilli recommended.
  • 250 ml Heavy Cream For a rich and creamy sauce.
  • 2 cloves Garlic Minced for flavor enhancement.
  • 1 medium Onion Finely chopped.
  • 1 tablespoon Olive Oil For sautéing onions and garlic.
  • 50 grams Parmesan Cheese Freshly grated for topping.

Instructions

  • 1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes.
  • 2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.
  • 3. Add minced garlic and sauté for an additional minute until fragrant.
  • 4. Add sliced chorizo and cook for 5-7 minutes until crispy and golden brown.
  • 5. Reduce heat to low, pour in heavy cream, and simmer for 5 minutes.
  • 6. Season with salt and pepper, then stir in grated Parmesan cheese until melted.
  • 7. Drain the pasta, reserving a cup of pasta water. Add pasta to the skillet and toss to coat.
  • 8. If the sauce is too thick, add reserved pasta water to reach desired consistency.
  • 9. Garnish with chopped parsley and serve immediately.
