Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes.
2. In a skillet, heat olive oil over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.
3. Add minced garlic and sauté for an additional minute until fragrant.
4. Add sliced chorizo and cook for 5-7 minutes until crispy and golden brown.
5. Reduce heat to low, pour in heavy cream, and simmer for 5 minutes.
6. Season with salt and pepper, then stir in grated Parmesan cheese until melted.
7. Drain the pasta, reserving a cup of pasta water. Add pasta to the skillet and toss to coat.
8. If the sauce is too thick, add reserved pasta water to reach desired consistency.
9. Garnish with chopped parsley and serve immediately.
