Instructions

  • Gather all your ingredients and tools. Ensure your shrimp are thawed, peeled, and deveined.
  • In a large skillet or pot, add olive oil over medium heat. Allow the oil to warm up for about a minute.
  • Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  • Add the minced garlic and chopped bell peppers. Sauté for an additional 2-3 minutes.
  • Pour in the chicken broth and scrape any browned bits off the bottom of the pan.
  • Add the chipotle peppers and a tablespoon of adobo sauce. Stir well.
  • Let the mixture simmer for about 5 minutes.
  • Add the heavy cream slowly while stirring to create a rich sauce.
  • Add the shrimp to the sauce and cook for about 3-5 minutes until they turn pink and opaque.
  • Season with salt and pepper to taste.
  • Remove from heat and stir in the fresh lime juice.
  • Garnish with chopped cilantro and serve hot.
