Instructions
Gather all your ingredients and tools. Ensure your shrimp are thawed, peeled, and deveined.
In a large skillet or pot, add olive oil over medium heat. Allow the oil to warm up for about a minute.
Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
Add the minced garlic and chopped bell peppers. Sauté for an additional 2-3 minutes.
Pour in the chicken broth and scrape any browned bits off the bottom of the pan.
Add the chipotle peppers and a tablespoon of adobo sauce. Stir well.
Let the mixture simmer for about 5 minutes.
Add the heavy cream slowly while stirring to create a rich sauce.
Add the shrimp to the sauce and cook for about 3-5 minutes until they turn pink and opaque.
Season with salt and pepper to taste.
Remove from heat and stir in the fresh lime juice.
Garnish with chopped cilantro and serve hot.
