Instructions

  • Preheat your oven to 350°F (175°C).
  • Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes.
  • Heat olive oil in a skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent.
  • Add minced garlic and sauté for 1 minute.
  • Add diced chicken, season with salt, pepper, and Italian seasoning. Cook until chicken is no longer pink, about 5-7 minutes.
  • Add fresh spinach and stir until wilted, about 2-3 minutes.
  • In a bowl, combine cream cheese and chicken broth. Whisk until smooth.
  • Drain pasta and add to the skillet. Pour the creamy sauce over and stir until well combined.
  • Transfer mixture to a greased 9x13 inch baking dish. Spread evenly.
  • Sprinkle shredded cheddar cheese on top.
  • Bake for 20-25 minutes until cheese is bubbly and golden brown.
  • Allow to cool for 5 minutes before serving.
