Instructions
Preheat your oven to 375°F (190°C).
Cook the gnocchi according to package instructions, then drain and set aside.
In a large skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
Add fresh spinach to the skillet and cook for 3-4 minutes until wilted.
In a mixing bowl, combine heavy cream, cheddar cheese, and Parmesan cheese, stirring until well mixed.
Season the cheese mixture with salt and pepper to taste.
Remove the skillet from heat and add the cooked gnocchi, folding gently to combine.
Pour the creamy cheese mixture over the gnocchi and spinach, mixing until evenly coated.
Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
Sprinkle panko breadcrumbs over the top.
Bake for 25-30 minutes until the top is golden brown and the sauce is bubbly.
