Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the gnocchi according to package instructions, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
  • Add fresh spinach to the skillet and cook for 3-4 minutes until wilted.
  • In a mixing bowl, combine heavy cream, cheddar cheese, and Parmesan cheese, stirring until well mixed.
  • Season the cheese mixture with salt and pepper to taste.
  • Remove the skillet from heat and add the cooked gnocchi, folding gently to combine.
  • Pour the creamy cheese mixture over the gnocchi and spinach, mixing until evenly coated.
  • Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
  • Sprinkle panko breadcrumbs over the top.
  • Bake for 25-30 minutes until the top is golden brown and the sauce is bubbly.
  • Let it sit for 5-10 minutes before serving.
