Instructions
Heat olive oil in a large pot over medium heat until shimmering.
Add chicken to the pot, season with salt, pepper, and 1 tablespoon of Cajun seasoning. Cook for 5-7 minutes until browned and cooked through.
Transfer chicken to a plate. In the same pot, add onion and bell pepper. Sauté for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Return chicken to the pot with remaining Cajun seasoning. Stir to coat.
Pour in chicken broth and bring to a simmer, scraping the bottom of the pot.
Add pasta, stir to submerge, cover, and cook for 10-12 minutes until al dente.
Reduce heat to low, slowly stir in heavy cream, and cook for an additional 2-3 minutes.
Remove from heat and serve immediately, garnished with parsley or cheese if desired.
