Instructions
Preheat your oven to 375°F (190°C).
Wash and peel the potatoes, then slice them into thin rounds, about 1/8 inch thick.
Melt the butter in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
Pour in the heavy cream and stir to combine. Simmer gently for about 5 minutes.
Season the cream mixture with salt and pepper. Taste and adjust seasoning if necessary.
In a greased baking dish, layer the sliced potatoes, pouring cream mixture and sprinkling cheese between layers.
Cover with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 20-25 minutes until golden brown and bubbling.
Let the gratin rest for about 10 minutes before serving.
Garnish with fresh herbs before serving.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This dish also freezes well for up to 2 months.
