  • 2 cups Fresh Tomatoes Ripe and diced, providing the base for the sauce.
  • 1 cup Roasted Red Peppers Jarred or homemade, drained and chopped.
  • 4 cloves Garlic Minced for flavor enhancement.
  • 1 medium Onion Finely chopped, preferably yellow for balanced flavor.
  • 2 tablespoons Olive Oil Extra virgin, for sautéing vegetables.
  • to taste Salt Kosher salt recommended.
  • to taste Black Pepper Freshly cracked for best results.
  • 1 handful Fresh Basil Chopped, for garnish and flavor enhancement.
  • 1 tablespoon Lemon Juice Freshly squeezed for brightness.

Instructions

  • Prepare your ingredients: dice the tomatoes, chop the roasted red peppers, and mince the garlic and onion.
  • In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
  • Add minced garlic and cook for an additional 1-2 minutes, being careful not to brown it.
  • Incorporate diced tomatoes and chopped roasted red peppers. Stir well and let simmer for 5-7 minutes.
  • Season with salt and pepper, and add lemon juice. Stir to combine.
  • Pat cod fillets dry and season with salt and pepper. Nestle them into the sauce, cover, and poach for 8-10 minutes.
  • Once cooked, sprinkle with fresh basil and serve immediately with sauce spooned over the top.

Notes

For variations, consider adding crushed red pepper flakes for heat or incorporating additional vegetables like zucchini or spinach.
