Instructions
Prepare your ingredients: dice the tomatoes, chop the roasted red peppers, and mince the garlic and onion.
In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
Add minced garlic and cook for an additional 1-2 minutes, being careful not to brown it.
Incorporate diced tomatoes and chopped roasted red peppers. Stir well and let simmer for 5-7 minutes.
Season with salt and pepper, and add lemon juice. Stir to combine.
Pat cod fillets dry and season with salt and pepper. Nestle them into the sauce, cover, and poach for 8-10 minutes.
Once cooked, sprinkle with fresh basil and serve immediately with sauce spooned over the top.

For variations, consider adding crushed red pepper flakes for heat or incorporating additional vegetables like zucchini or spinach.
