Instructions
1. Brew a strong cup of coffee and let it cool to room temperature.
2. In a large mixing bowl, whisk the egg yolks and granulated sugar until pale and creamy, about 5 minutes.
3. Gently fold in the mascarpone cheese until smooth.
4. In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
5. Fold the whipped cream into the mascarpone mixture until fully combined.
6. Dip each ladyfinger into the cooled coffee and place them in a single layer in a dish.
7. Spread half of the mascarpone mixture over the ladyfingers.
8. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
9. Cover and refrigerate for at least 4 hours, preferably overnight.
10. Dust with cocoa powder before serving.
Notes
