Ingredients

Vegetables

  • 4 cups Ripe Tomatoes Chopped into bite-sized pieces.
  • 1 large Cucumber Peeled and sliced into half-moons.
  • 1 small Red Onion Thinly sliced.

Bread

  • 3 cups Stale Bread Cut into bite-sized cubes.

Herbs

  • 1 cup Fresh Basil Torn into small pieces.

Dressing

  • 1/4 cup Extra Virgin Olive Oil High-quality.
  • 2 tablespoons Balsamic Vinegar For acidity.

Seasoning

  • Salt To taste.
  • Pepper To taste.

Instructions

  • 1. Prepare the ingredients: Wash and chop the tomatoes, and place them in a large mixing bowl.
  • 2. Wash and slice the cucumber, then add it to the bowl with the tomatoes.
  • 3. Slice the red onion thinly. If desired, soak in cold water for 10 minutes, then add to the bowl.
  • 4. Cut the stale bread into cubes and add to the mixing bowl.
  • 5. Tear the fresh basil leaves and sprinkle them over the salad.
  • 6. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper.
  • 7. Drizzle the dressing over the salad and toss gently to combine.
  • 8. Let the salad sit for 15 minutes to allow flavors to meld.
  • 9. Toss again before serving, adjusting seasoning if necessary.
