Instructions
Preheat your oven to 275°F (135°C).
Season the chuck roast generously with black pepper on both sides.
In a large skillet, heat a tablespoon of oil over medium-high heat. Sear the chuck roast for about 3-4 minutes on each side until golden-brown.
Transfer the roast to a large roasting pan or Dutch oven.
Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the roast.
Add the stick of butter on top of the roast.
Arrange the chopped carrots, potatoes, and celery around the roast.
Pour one cup of beef broth around the roast and vegetables.
Cover the roasting pan tightly with a lid or aluminum foil.
Place the roasting pan in the preheated oven and cook for approximately 4-5 hours.
Once done, let the roast rest for about 15-20 minutes before slicing.
Slice the pot roast against the grain and serve with the vegetables and pan juices.
Notes
For variations, consider adding jalapeños for spice or using different root vegetables.
