Instructions
1. Brew about 1 to 1.5 cups of strong coffee and let it cool to room temperature.
2. In a mixing bowl, beat 4 egg yolks with ½ cup of sugar until pale and creamy (3-5 minutes).
3. Fold in 16 ounces of mascarpone cheese until combined.
4. In a separate bowl, beat 4 egg whites with a pinch of salt until stiff peaks form (4-6 minutes).
5. Gently fold the whipped egg whites into the mascarpone mixture.
6. Dip each ladyfinger in the cooled coffee and layer them in a 9x9-inch dish.
7. Spread half of the mascarpone mixture over the ladyfingers.
8. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
9. Cover and refrigerate for at least 4 hours, preferably overnight.
10. Dust with cocoa powder before serving and enjoy!

Store leftovers in an airtight container in the refrigerator for up to 3 days.
