Instructions
Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing with butter and dusting with flour.
In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and salt. Whisk until well mixed.
Add softened butter to the dry ingredients and mix on low speed until it resembles coarse crumbs.
In a separate bowl, whisk the eggs, then add milk and vanilla. Mix until combined.
Gradually pour the wet mixture into the dry ingredients while mixing on medium speed until smooth.
Divide the batter evenly between the prepared pans and smooth the tops.
Bake for 25-30 minutes, checking for doneness with a toothpick.
Allow cakes to cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
For frosting, cream softened butter in a bowl, gradually add powdered sugar, and mix until combined.
Add milk to achieve desired consistency and mix until fluffy. Add food coloring if desired.
Once cakes are cool, place one layer on a serving plate and spread frosting on top.
Place the second layer on top and frost the top and sides of the cake.
Decorate as desired and serve.
Notes
Store leftovers in an airtight container at room temperature for up to three days. Can be frozen for up to three months.
