Instructions

  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add chopped onion and sauté for about 5 minutes until soft and translucent.
  • Incorporate minced garlic, grated carrot, and chopped celery. Cook for 3-4 minutes until softened.
  • Add ground meat, breaking it apart with a wooden spoon. Cook for 7-10 minutes until browned.
  • Stir in canned crushed tomatoes and scrape the bottom of the skillet.
  • Season with oregano, cinnamon, salt, and pepper. Stir to combine.
  • Reduce heat to low and let the sauce simmer uncovered for at least 30 minutes, stirring occasionally.
  • Taste and adjust seasoning as necessary.
  • Remove from heat and stir in chopped parsley.
  • Serve over pasta or with crusty bread, garnished with additional parsley.
