Heat olive oil in a large skillet over medium heat until shimmering.
Add chopped onion and sauté for about 5 minutes until soft and translucent.
Incorporate minced garlic, grated carrot, and chopped celery. Cook for 3-4 minutes until softened.
Add ground meat, breaking it apart with a wooden spoon. Cook for 7-10 minutes until browned.
Stir in canned crushed tomatoes and scrape the bottom of the skillet.
Season with oregano, cinnamon, salt, and pepper. Stir to combine.
Reduce heat to low and let the sauce simmer uncovered for at least 30 minutes, stirring occasionally.
Taste and adjust seasoning as necessary.
Remove from heat and stir in chopped parsley.
Serve over pasta or with crusty bread, garnished with additional parsley.
