Ingredients

Chickpeas

  • 1 can Chickpeas, drained and rinsed 15 ounces

Vegetables

  • 1 cup Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • 0.5 medium Red Onion, finely chopped
  • 0.25 cup Fresh Parsley, chopped

Dressing

  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lemon Juice

Seasoning

  • Salt and Pepper To taste

Instructions

  • Drain and rinse the chickpeas under cold water, then allow them to drain well.
  • Halve the cherry tomatoes and place them in a large mixing bowl.
  • Dice the cucumber and add it to the mixing bowl.
  • Finely chop the red onion and add it to the bowl.
  • Chop the fresh parsley and mix it into the bowl.
  • In a separate bowl, whisk together the olive oil and lemon juice.
  • Season the dressing with salt and pepper to taste.
  • Add the drained chickpeas to the mixing bowl and gently fold them in.
  • Pour the dressing over the salad and toss gently to combine.
  • Refrigerate the salad for at least 30 minutes before serving.
  • Serve chilled or at room temperature, garnished with fresh parsley if desired.

Notes

For variations, consider adding grilled chicken, different herbs, or seasonal vegetables.
