Chickpeas, drained and rinsed

Instructions
Drain and rinse the chickpeas under cold water, then allow them to drain well.
Halve the cherry tomatoes and place them in a large mixing bowl.
Dice the cucumber and add it to the mixing bowl.
Finely chop the red onion and add it to the bowl.
Chop the fresh parsley and mix it into the bowl.
In a separate bowl, whisk together the olive oil and lemon juice.
Season the dressing with salt and pepper to taste.
Add the drained chickpeas to the mixing bowl and gently fold them in.
Pour the dressing over the salad and toss gently to combine.
Refrigerate the salad for at least 30 minutes before serving.
Serve chilled or at room temperature, garnished with fresh parsley if desired.
Notes
For variations, consider adding grilled chicken, different herbs, or seasonal vegetables.
