Instructions
1. Prepare chicken breasts by pounding them to an even thickness of about 1/2 inch. Season with salt and pepper.
2. Set up a breading station: whisk eggs in one bowl and mix breadcrumbs with Parmesan in another.
3. Heat olive oil in a skillet over medium heat.
4. Dip chicken in egg wash, then dredge in breadcrumb mixture.
5. Fry chicken in hot oil for 4-5 minutes on each side until golden brown and cooked through.
6. Transfer cooked chicken to a paper towel-lined plate to drain excess oil.
7. Preheat oven to 375°F (190°C) and spread marinara sauce in a baking dish.
8. Place chicken in the baking dish, spoon marinara sauce over each piece, and top with mozzarella cheese.
9. Bake for 20-25 minutes until cheese is bubbly and golden brown.
10. Let rest for a few minutes, garnish with basil, and serve hot.
