Instructions

  • 1. Prepare chicken breasts by pounding them to an even thickness of about 1/2 inch. Season with salt and pepper.
  • 2. Set up a breading station: whisk eggs in one bowl and mix breadcrumbs with Parmesan in another.
  • 3. Heat olive oil in a skillet over medium heat.
  • 4. Dip chicken in egg wash, then dredge in breadcrumb mixture.
  • 5. Fry chicken in hot oil for 4-5 minutes on each side until golden brown and cooked through.
  • 6. Transfer cooked chicken to a paper towel-lined plate to drain excess oil.
  • 7. Preheat oven to 375°F (190°C) and spread marinara sauce in a baking dish.
  • 8. Place chicken in the baking dish, spoon marinara sauce over each piece, and top with mozzarella cheese.
  • 9. Bake for 20-25 minutes until cheese is bubbly and golden brown.
  • 10. Let rest for a few minutes, garnish with basil, and serve hot.

Notes

For variations, consider adding crushed red pepper flakes or using different cheeses. Serve with pasta or a fresh salad.
