In a medium saucepan, combine the granulated sugar, flour, and salt. Whisk together until well blended.
Gradually add the whole milk to the dry ingredients, whisking continuously to avoid lumps. Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken and bubble, about 8-10 minutes.
In a small bowl, whisk the egg yolks. Once the milk mixture is thickened, temper the egg yolks by adding a small amount of the hot mixture to the yolks while whisking continuously.
Return the tempered yolk mixture to the saucepan and cook for an additional 2-3 minutes, stirring constantly until the pudding reaches your desired thickness. Remove from heat.
Add the butter and vanilla extract to the pudding, stirring until the butter is melted and fully incorporated. Allow the pudding to cool slightly.
While the pudding is cooling, slice the ripe bananas into thin rounds. Set aside.
To assemble the pudding, start by placing a layer of vanilla wafers at the bottom of a serving dish or individual cups. Follow with a layer of sliced bananas, then pour a generous layer of pudding over the top.
Repeat the layering process until all ingredients are used, finishing with a layer of pudding on top. Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight.
