Instructions

  • 1. Prepare the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
  • 2. Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes on each side until golden brown and cooked through. Transfer to a plate and cover with foil.
  • 3. Sauté the Garlic and Spinach: In the same skillet, reduce heat to medium, add minced garlic, and sauté for 30 seconds. Add spinach and sauté until wilted, about 2-3 minutes. Remove and set aside.
  • 4. Make the Cream Sauce: Pour heavy cream into the skillet, scraping the bottom to deglaze. Bring to a simmer, stir in Parmesan and Italian seasoning until smooth.
  • 5. Add Lemon Juice: Remove from heat and stir in lemon juice. Adjust seasoning with salt and pepper if necessary.
  • 6. Combine Ingredients: Return chicken to the skillet, spoon sauce over it, and add sautéed spinach back to warm through.
  • 7. Serve: Transfer to a serving platter, garnish with parsley, and serve immediately.

For variations, consider adding mushrooms, using different cheeses, or serving over pasta.
