Ingredients

Pasta

  • 8 ounces rotini pasta Can substitute with penne or fusilli.

Chicken

  • 2 cups cooked, shredded chicken Use rotisserie chicken or grilled chicken breasts.

Greens

  • 4 cups chopped romaine lettuce Can mix with other greens like spinach or arugula.

Cheese

  • 1/2 cup grated Parmesan cheese Freshly grated is recommended.

Dressing

  • 1 cup Caesar dressing Store-bought or homemade.

Seasoning

  • 1/2 teaspoon garlic powder

Instructions

  • 1. Cook the pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse with cold water.
  • 2. Prepare the chicken: Shred rotisserie chicken or grill seasoned chicken breasts until cooked through, then shred or chop.
  • 3. Chop the greens: Wash and chop the romaine lettuce into bite-sized pieces and place in a large mixing bowl.
  • 4. Combine ingredients: Add cooled pasta, shredded chicken, grated Parmesan, and garlic powder to the bowl with romaine.
  • 5. Add the dressing: Drizzle Caesar dressing over the mixture, starting with half and adding more as needed.
  • 6. Season to taste: Adjust seasoning with salt and pepper, and add more cheese or dressing if desired.
  • 7. Chill and serve: Cover and refrigerate for at least 30 minutes before serving. Garnish with optional toppings.

Notes

This salad can be made ahead of time and is best served chilled. Feel free to customize with different proteins or vegetables.
