Ingredients

Chicken

  • 2 pieces boneless, skinless chicken breasts Choose high-quality chicken for the best flavor and texture.

Marinade

Base

  • 1 cup cooked white or brown rice Choose your preferred type of rice for the base of the bowl.
  • 1 can black beans 15 oz, drained and rinsed. Beans add protein, fiber, and a creamy texture.
  • 1 cup corn Fresh, frozen, or canned. Sweet corn adds a pop of color and sweetness.
  • 1 cup diced tomatoes Fresh tomatoes provide acidity and juiciness to the bowl.
  • 1 piece ripe avocado Sliced. Creamy avocado adds richness and balances the flavors.
  • 1/2 cup shredded cheese Cheddar or Monterey Jack. Cheese adds a deliciously melty texture.
  • 1/4 cup sour cream or Greek yogurt This offers a tangy contrast and creaminess.
  • 1 piece lime Cut into wedges. Lime juice brightens the flavors of the dish.

Instructions

  • In a mixing bowl, combine the olive oil, chili powder, cumin, garlic powder, salt, and pepper. Whisk until well combined. Add the chicken breasts and coat them with the marinade. Marinate for at least 15 minutes.
  • Cook the rice according to package instructions. Fluff with a fork and set aside.
  • Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 6-7 minutes on each side until fully cooked and the internal temperature reaches 165°F. Remove from skillet and let rest before slicing.
  • Assemble the bowls by placing rice at the bottom, followed by black beans, corn, sliced chicken, diced tomatoes, and avocado. Top with cheese, sour cream, lime juice, and cilantro.
  • Serve immediately while fresh and warm.
