Gather all ingredients and prep them for cooking.
Cut chicken into small pieces and pat dry.

Season chicken with salt, pepper, garlic powder, and cumin. Cook until fully cooked through.
Add chopped chipotle peppers and adobo sauce to the skillet. Stir and cook for another 2-3 minutes.
Remove from heat and stir in 1.5 cups of shredded cheese until melted.
Preheat taco shells according to package instructions.
Spoon cheesy chicken filling into each taco shell and top with remaining cheese.
Place filled tacos in the oven until cheese is bubbly and golden.
