  • 1 teaspoon Cumin Ground cumin for seasoning.

Instructions

  • Gather all ingredients and prep them for cooking.
  • Cut chicken into small pieces and pat dry.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 3-4 minutes.
  • Season chicken with salt, pepper, garlic powder, and cumin. Cook until fully cooked through.
  • Add chopped chipotle peppers and adobo sauce to the skillet. Stir and cook for another 2-3 minutes.
  • Remove from heat and stir in 1.5 cups of shredded cheese until melted.
  • Preheat taco shells according to package instructions.
  • Spoon cheesy chicken filling into each taco shell and top with remaining cheese.
  • Place filled tacos in the oven until cheese is bubbly and golden.
  • Garnish with fresh cilantro and serve with lime wedges.
