Instructions
Rinse the asparagus under cold water and trim off the woody ends.
Preheat your grill or oven to broil at 400°F (204°C).
Spread the asparagus on a baking sheet and drizzle with olive oil, tossing to coat evenly.
Season the asparagus with salt and pepper, then grill for 6-8 minutes until tender with char marks.
In a mixing bowl, combine minced garlic, chopped preserved lemons, and a tablespoon of olive oil. Mix well.
Adjust the dressing with salt and pepper to taste.
Once the asparagus is charred, remove it from the grill and drizzle with the lemon dressing. Serve warm.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat in a skillet or serve cold in a salad.
