Ingredients

Asparagus

  • 1 pound Fresh Asparagus Look for firm, vibrant green spears.

Olive Oil

  • 2 tablespoons Extra Virgin Olive Oil Enhances flavor and helps with caramelization.

Preserved Lemons

  • 1-2 lemons Fresh Preserved Lemons Rinse well before use to remove excess salt.

Garlic

  • 2 cloves Garlic Minced for dressing.

Seasonings

  • Sea Salt To taste.
  • Freshly Cracked Black Pepper To taste.

Fresh Herbs (optional)

  • 1 handful Chopped Fresh Herbs Such as parsley or dill for added flavor.

Instructions

  • Rinse the asparagus under cold water and trim off the woody ends.
  • Preheat your grill or oven to broil at 400°F (204°C).
  • Spread the asparagus on a baking sheet and drizzle with olive oil, tossing to coat evenly.
  • Season the asparagus with salt and pepper, then grill for 6-8 minutes until tender with char marks.
  • In a mixing bowl, combine minced garlic, chopped preserved lemons, and a tablespoon of olive oil. Mix well.
  • Adjust the dressing with salt and pepper to taste.
  • Once the asparagus is charred, remove it from the grill and drizzle with the lemon dressing. Serve warm.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in a skillet or serve cold in a salad.
