Instructions
Rinse the sushi rice under cold water in a fine-mesh strainer until the water runs clear.
In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes.
While the rice is resting, prepare the vinegar mixture by combining rice vinegar, sugar, and salt in a small saucepan over low heat.
Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture.
Prepare your toppings: cut the imitation crab meat, slice the avocado, and slice the cucumber.
Assemble the bowls by placing a scoop of sushi rice at the bottom of each bowl.
Arrange the imitation crab, avocado, and cucumber on top of the rice.
Sprinkle sesame seeds and chopped green onions over the top.
Serve with soy sauce, wasabi, and pickled ginger on the side.
