Instructions
Preheat your oven to 400°F (200°C).
Wash and peel the sweet potatoes if desired, then cut them into ½-inch cubes.
In a large mixing bowl, combine the cubed sweet potatoes with 1 tablespoon of olive oil, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Toss until evenly coated.
Spread the sweet potatoes out in a single layer on a baking sheet lined with parchment paper. Place the baking sheet in the preheated oven.
Roast the sweet potatoes for about 25-30 minutes, flipping them halfway through.
While the sweet potatoes are roasting, prepare the chicken. In another mixing bowl, combine the chicken breasts with 1 tablespoon of olive oil, Cajun seasoning, remaining salt, and black pepper. Mix until well coated.
In a large skillet over medium-high heat, add a drizzle of olive oil and allow it to heat up. Add the seasoned chicken pieces in a single layer and sauté for about 6-8 minutes until cooked through.
Remove the chicken from the skillet and let it rest for a couple of minutes.
Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
To assemble, place a scoop of roasted sweet potatoes at the bottom of each bowl, top with sautéed Cajun chicken, and garnish with parsley.
Serve immediately while warm and enjoy!
