Instructions

  • Preheat your oven to 375°F (190°C) if baking, or heat a grill over medium-high heat.
  • Season the chicken breasts with salt and pepper on both sides.
  • If baking, place the seasoned chicken on a greased baking sheet. If grilling, brush the grill with olive oil.
  • Bake for 25-30 minutes or grill for 6-7 minutes per side until cooked through (internal temperature of 165°F).
  • While the chicken cooks, prepare the bruschetta topping by combining tomatoes, basil, garlic, olive oil, balsamic vinegar, and seasoning in a bowl.
  • Once cooked, let the chicken rest for a few minutes, then sprinkle with mozzarella cheese if desired.
  • Top each chicken breast with the bruschetta mixture and drizzle with balsamic glaze before serving.
  • Serve warm, garnished with additional basil if desired.
