  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 1/3 cup Unsweetened Cocoa Powder
  • 1/2 cup All-Purpose Flour
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Baking Powder
  • 1 cup Chocolate Chips (semi-sweet or dark)

Instructions

  • Preheat your oven to 350°F (175°C). Prepare a mini muffin pan by greasing it lightly or using mini muffin liners for easy removal.
  • In a medium saucepan, melt the unsalted butter over low heat. Remove it from the heat once melted and allow it to cool slightly.
  • Whisk the granulated sugar into the melted butter until well combined.
  • Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract until everything is well blended.
  • In a separate bowl, sift together the cocoa powder, all-purpose flour, salt, and baking powder.
  • Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
  • Fold in the chocolate chips until they are evenly distributed throughout the batter.
  • Fill each mini muffin cup about two-thirds full with the brownie batter.
  • Bake in the preheated oven for 10-12 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  • Let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
