Instructions
Preheat your oven to 350°F (175°C). Prepare a mini muffin pan by greasing it lightly or using mini muffin liners for easy removal.
In a medium saucepan, melt the unsalted butter over low heat. Remove it from the heat once melted and allow it to cool slightly.
Whisk the granulated sugar into the melted butter until well combined.
Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract until everything is well blended.
In a separate bowl, sift together the cocoa powder, all-purpose flour, salt, and baking powder.
Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
Fold in the chocolate chips until they are evenly distributed throughout the batter.
Fill each mini muffin cup about two-thirds full with the brownie batter.
Bake in the preheated oven for 10-12 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
Let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
