Instructions
Prepare your ingredients: Crack the eggs into a bowl, season with salt and pepper, and whisk until well mixed.
Heat a non-stick skillet over medium heat and add olive oil or butter.
Pour the beaten eggs into the skillet. If using vegetables, add them now. Cook undisturbed for 2-3 minutes.
Gently stir the eggs with a spatula until just set but still slightly soft. Remove from heat.
Toast your bread or English muffin slices until golden brown.
Assemble the sandwich: Place cheese on one half of the bread, add cooked eggs, avocado, and top with the other half.
Optionally, return the sandwich to the skillet to melt the cheese and crisp the bread for 1-2 minutes.
Slice in half if desired and serve warm.
