Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and baking soda. Whisk together until fully incorporated.
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
Make a well in the center of the mixture and pour in the buttermilk. Gently stir until just combined; do not overmix.
Turn the dough out onto a lightly floured surface. Knead it gently a few times until it comes together, then pat it into a rectangle about 1-inch thick.
Using a biscuit cutter or a glass, cut out biscuits from the dough and place them on a baking sheet lined with parchment paper.
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.
In a large skillet over medium heat, add the ground breakfast sausage. Cook until browned and fully cooked through.
Once the sausage is cooked, sprinkle the 1/4 cup of flour over the sausage and stir to combine.
Gradually pour in the milk while stirring constantly. Bring the mixture to a simmer, and continue cooking until it thickens, about 5-7 minutes.
Add the black pepper, garlic powder, onion powder, and salt to taste. Stir to combine all the flavors, then remove from heat.
Once the biscuits are done, remove them from the oven and let them cool slightly. Serve the biscuits warm, topped generously with the sausage gravy.
