Instructions
Start by taking the beef tenderloin out of the refrigerator about 30 minutes before cooking to bring it to room temperature. Preheat your oven to 400°F (200°C).
Generously season the beef tenderloin with coarse kosher salt and freshly cracked black pepper on all sides. Press the seasoning into the meat.
In a large oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
Carefully place the seasoned beef tenderloin in the skillet and sear for about 3-4 minutes on each side until a golden-brown crust forms.
While searing, melt 1/2 cup of unsalted butter in a small saucepan over low heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
During the last minute of searing, spoon some of the melted garlic butter over the top of the tenderloin.

Remove the skillet from the oven and transfer the tenderloin to a cutting board. Cover loosely with aluminum foil and let it rest for 10-15 minutes.
Slice the tenderloin into 1-inch thick medallions and arrange on a serving platter, drizzling the garlic butter sauce over the top. Garnish with chopped fresh parsley.
