Ingredients

Grains

  • 1 cup quinoa or brown rice (uncooked) These whole grains serve as a nutritious base for your bowl.

Liquid

  • 2 cups vegetable broth or water Using vegetable broth enhances the flavor of the grains.

Beans

  • 1 can (15 oz) black beans Drained and rinsed, packed with protein.

Vegetables

  • 1 cup corn Frozen or fresh, adds sweetness.
  • 1 each bell pepper Diced, any color for crunch and color.
  • 1 each avocado Sliced, adds creaminess.
  • 1 cup cherry tomatoes Halved, juicy and flavorful.
  • 1 small red onion Thinly sliced for sharpness.
  • 1 each lime Juiced for brightness.

Dressing

  • 1 tablespoon olive oil Adds smooth richness.
  • 1 teaspoon chili powder Lends subtle heat.

Seasoning

  • Salt and pepper To taste.

Garnish

  • 1 bunch fresh cilantro Chopped, for garnish.

Instructions

  • Rinse quinoa or brown rice under cold water to remove bitterness.
  • In a medium saucepan, bring 2 cups of vegetable broth or water to a boil. Add rinsed grains, stir, reduce heat to low, cover, and simmer.
  • Prepare vegetables: dice bell pepper, halve cherry tomatoes, and thinly slice red onion. Add frozen corn to the pot during the last few minutes of cooking.
  • In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  • Once grains are cooked, let sit covered for 5 minutes, then fluff with a fork.
  • In a large mixing bowl, combine fluffed grains with black beans, corn, bell pepper, cherry tomatoes, and red onion. Drizzle with lime dressing and toss gently.
  • Assemble bowls with a scoop of the grain mixture, topped with sliced avocado and garnished with cilantro.
  • Serve immediately and enjoy!
