Instructions
Rinse quinoa or brown rice under cold water to remove bitterness.
In a medium saucepan, bring 2 cups of vegetable broth or water to a boil. Add rinsed grains, stir, reduce heat to low, cover, and simmer.
Prepare vegetables: dice bell pepper, halve cherry tomatoes, and thinly slice red onion. Add frozen corn to the pot during the last few minutes of cooking.
In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
Once grains are cooked, let sit covered for 5 minutes, then fluff with a fork.
In a large mixing bowl, combine fluffed grains with black beans, corn, bell pepper, cherry tomatoes, and red onion. Drizzle with lime dressing and toss gently.
