Instructions

  • Preheat the oven to 425°F (220°C).
  • Cut the avocados in half, remove the pit, and scoop the flesh out gently. Slice each half into wedges or strips, about 1/2 inch thick.
  • Set up the breading station: In one bowl, place the flour mixed with a pinch of salt and pepper. In a second bowl, whisk the eggs. In a third bowl, combine the breadcrumbs, garlic powder, paprika, and a sprinkle of salt and pepper.
  • Dip each avocado wedge first into the flour, then into the beaten egg, and finally roll it in the breadcrumb mixture. Place on a baking sheet lined with parchment paper.
  • Drizzle olive oil over the fries or spray lightly with cooking spray. Bake for about 15-20 minutes, flipping halfway through.
  • While the fries bake, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  • Assemble the tacos: On each tortilla, layer the shredded lettuce, diced tomatoes, and onions. Add the baked avocado fries on top and sprinkle with chopped cilantro.
  • Serve with lime wedges on the side for squeezing fresh lime juice over the tacos.
