Heat a large skillet over medium-high heat. Add ground chicken and cook until browned, about 5-7 minutes.
Drain excess fat if necessary, then push meat to one side. Add minced garlic and grated ginger, sauté for 30 seconds.
Add shredded cabbage and carrots, stir to combine, and cook for about 5 minutes until vegetables soften slightly.
Pour in soy sauce and sesame oil, stir well, and cook for an additional 2-3 minutes.
Taste and adjust seasoning with black pepper if needed. Serve in bowls garnished with green onions and sesame seeds.
