  • 4 large Eggs Fresh eggs for sunny side up or over-easy style.
  • 4 pieces Corn Tortillas Soft and pliable tortillas for best texture.
  • 1 cup Salsa Store-bought or homemade salsa.
  • 1 tablespoon Olive Oil For frying tortillas and eggs.
  • 1/2 cup Black Beans Rinsed and drained for added protein.
  • 1/2 cup Queso Fresco Crumble for topping.
  • 1 piece Avocado Sliced or diced for creaminess.

  • 2 pieces Lime Wedges For serving.
  • 1/4 cup Fresh Cilantro Chopped for garnish.

Instructions

  • Prepare the salsa by mixing diced tomatoes, chopped onion, minced jalapeƱo, cilantro, and lime juice in a bowl. Set aside.
  • Heat olive oil in a skillet over medium heat. Cook each tortilla for about 30 seconds on each side until warm and slightly crispy. Remove and drain on paper towels.
  • In the same skillet, crack the eggs and cook to your desired doneness, seasoning with salt and pepper.
  • Warm black beans in a saucepan over low heat until heated through.
  • Assemble by placing two tortillas on each plate, topping with black beans and a cooked egg.
  • Spoon salsa over the eggs, sprinkle with queso fresco, avocado, and cilantro.
  • Serve immediately with lime wedges on the side.

Notes

For variations, consider adding jalapeƱos for spice, sour cream for creaminess, or additional vegetables for nutrition.
