  • 0.5 cup Parmesan Cheese Freshly grated for best flavor.

  • 3 tablespoons Fresh Lemon Juice Juice of one large lemon.

Instructions

  • Wash the arugula thoroughly under cold water and dry using a salad spinner.
  • Grate the Parmesan cheese finely using a cheese grater.
  • In a small mixing bowl, combine the lemon juice and a pinch of salt. Whisk to dissolve the salt.
  • Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
  • In a large salad bowl, add the cleaned arugula leaves.
  • Pour the dressing over the arugula and toss gently to coat.
  • Sprinkle the grated Parmesan cheese over the top and toss lightly again.
  • Serve immediately for the best flavor and texture.

Notes
