Instructions
Wash the arugula thoroughly under cold water and dry using a salad spinner.
Grate the Parmesan cheese finely using a cheese grater.
In a small mixing bowl, combine the lemon juice and a pinch of salt. Whisk to dissolve the salt.
Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.
