  • 4 pieces Salmon Fillets Each fillet should be about 6 ounces.
  • 1 cup Pistachios Shelled and finely chopped, unsalted.
  • 2 tablespoons Olive Oil Extra virgin olive oil.
  • 1 teaspoon Garlic Powder
  • 1 piece Lemon Zest Zest of one lemon, finely grated.
  • 1 pinch Salt To taste.
  • 1 pinch Black Pepper Freshly ground, to taste.
  • 2 tablespoons Fresh Parsley Chopped, for garnish.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • Pat the salmon fillets dry with paper towels.
  • In a mixing bowl, combine pistachios, olive oil, garlic powder, lemon zest, salt, and pepper.
  • Place the salmon fillets skin-side down on the baking sheet and distribute the pistachio mixture over each fillet.
  • Bake the salmon for about 12-15 minutes, or until it flakes easily with a fork.
  • Let the salmon rest for a couple of minutes before serving.
  • Garnish with chopped fresh parsley before serving.
