Instructions
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Pat the salmon fillets dry with paper towels.
In a mixing bowl, combine pistachios, olive oil, garlic powder, lemon zest, salt, and pepper.
Place the salmon fillets skin-side down on the baking sheet and distribute the pistachio mixture over each fillet.
Bake the salmon for about 12-15 minutes, or until it flakes easily with a fork.
Let the salmon rest for a couple of minutes before serving.
Garnish with chopped fresh parsley before serving.
